Flounder Creole

Ingredients
  Butter 2 Tablespoon
  Chopped onion 1⁄4 Cup (4 tbs)
  Chopped green pepper 1⁄4 Cup (4 tbs)
  Mushrooms 1⁄4 Pound, sliced
  Canned tomatoes 1 Pound, drained
  Lemon juice 2 Tablespoon
  Dried tarragon leaves 1⁄4 Teaspoon
  Bay leaf 1
  Tabasco sauce 1⁄4 Teaspoon
  Salt 1⁄2 Teaspoon
  Flounder fillets 1 Pound
Directions

Melt butter in large skillet.
Add onion and pepper; cook until tender.
Add mushrooms; cook 3 minutes.
Add tomatoes, lemon juice, tarragon, bay leaf, Tabasco, and salt.
Cover; simmer 20 minutes.
Add flounder fillets; cover.
Simmer 5 to 10 minutes, until fish flakes easily.
