Creole Fish

This creole fish recipe is an old family recipe. One of my favorite fish recipes, the creole fish can be prepared with any fish of choice. saucy and tangy with grated lemon rind for flavor, the creole fish is baked with added rice.
Ingredients
  Fish 1 1⁄2 Pound
  Lemon 1
  Butter/Other fat 1 Teaspoon
  Finely chopped onion 2 Tablespoon (Adjust Quantity As Needed)
  Tomato juice 1⁄2 Cup (8 tbs)
  Grated lemon rind To Taste
  Pimiento 1
  Rice 6 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1.Select a fish with firm flesh, clean the skin and rub well with a slice of lemon.
MAKING
2.Melt the fat, add the onion and the fish and cook to a golden brown.
3.Season with salt and pepper
4.Then add the tomato-juice, a bit of lemon-rind, and the pimiento finely cut.
5.While the fish is cooking, cook the rice in boiling salted water until tender.
6.Make a crown of rice on a platter, place the fish in the center, pour the gravy over it, and garnish with thin slices of lemon.
SERVING
7.Serve with salads
