Easy Lobster Newburg

Ingredients
  Butter 6 Tablespoon
  Flour 2 Tablespoon
  Cut up lobster 3 Cup (48 tbs) (Cooked Or Canned)
  Nutmeg 1 Teaspoon
  Paprika 1 Dash
  Salt 1 Teaspoon
  Sherry 3 Tablespoon
  Egg yolks 3
  Cream 2 Cup (32 tbs)
  Toast triangles 6
Directions

Melt butter over low heat in top of double boiler; stir in flour, lobster, nutmeg, paprika, salt, and sherry.
Beat yolks lightly in small bowl.
Add cream; mix well.
Slowly stir yolk mixture into lobster.
Cook over hot water, stirring, until just thickened.
