Kentucky Chess Pie
|Sugar||1 Cup (16 tbs)|
|White vinegar||1 Teaspoon|
|Butter||1⁄2 Cup (8 tbs), melted|
|Unbaked 9 inch pie shell||1|
Mix the sugar, flour, and salt thoroughly.
Beat egg yolks with egg; beating constantly, slowly add the water, vinegar, and melted butter.
Add dry ingredients and mix well.
Turn into unbaked pie shell.
Bake at 350Â°F about 35 minutes, or until filling is set.
Meanwhile, prepare meringue.
Beat egg whites until foamy; add the sugar gradually, beating constantly until stiff peaks are formed.
Remove pie from oven; top with meringue and return to oven.
Bake 12 to 15 minutes, or until meringue is lightly browned.
