Fig Cream Charlotte

Ingredients
  Unflavored gelatin 1 Tablespoon
  Cold water 1⁄4 Cup (4 tbs)
  Canned fig juice 1 Cup (16 tbs)
  Sugar 1⁄3 Cup (5.33 tbs)
  Salt 1⁄8 Teaspoon
  Lemon juice 1 Tablespoon
  Almond extract 1⁄8 Teaspoon
  Canned figs 1 Cup (16 tbs)
  Heavy cream 1 Cup (16 tbs), whipped
Directions

Soften gelatin in cold water.
Combine fig juice, sugar and salt in saucepan.
Bring to a boiling point and simmer 3 minutes.
Add gelatin and stir until dissolved.
Cool until mixture begins to thicken and add lemon juice and almond extract.
Cut half the figs into slices and arrange on the bottom of mold.
Fold whipped cream into gelatin mixture.
Dice remaining figs and stir into mixture.
Pour over layer of figs in mold.
Chill until firm.
Unmold and serve with whipped cream.
