Duck A La Creole

Ingredients
  Fat 2 Tablespoon
  Flour 1 Tablespoon
  Chopped ham 2 Tablespoon
  Minced onion 2 Tablespoon
  Chopped sweet pepper 2 Tablespoon
  Celery 1⁄2 Cup (8 tbs), chopped
  Parsley 1 Tablespoon, chopped
  Consomme 1 1⁄2 Cup (24 tbs)
  Whole clove 1
  Mace 1⁄4 Teaspoon
  Duck 2 Cup (32 tbs), diced and cooked
Directions

MAKING
1.In a pan, melt fat, add flour and stir in ham
2.Season with paprika, salt, pepper, onion, sweet pepper, celery and parsley
3.Now stir for 2 minutes and then add consommé, clove, and mace
4.Keep simmering for 1 hour
5.Now strain the broth and stir in the duck
6.Remove to a serving plate

SERVING
7.Serve with vegetables
