Virginia Beef Tongue

Ingredients
  Beef tongue 1 (fresh)
  Brown sugar 1 Cup (16 tbs)
  Stewed cranberries 1 Cup (16 tbs)
  Butter 1⁄4 Cup (4 tbs)
  Whole cloves 1 Tablespoon
  Lemon 1⁄2 , sliced
Directions

MAKING
1.Scrub the tongue properly
2.In a pot, place the tongue and pour water to cover
3.Now simmer for 3-4 hours, until tender
4.Then remove the skin and trim root end
5.To 1 cup of liquid in which tongue was cooked, add remaining ingredients
6.Simmer tongue in mixture for 15 more minutes
7.Garnish with slices of lemon and sprigs of parsley, if desired
SERVING
9.Serve with sauce
