Creole Sauce

Ingredients
  Onion 1 Medium, sliced
  Celery stalks 3 , chopped
  Chopped green pepper 1⁄3 Cup (5.33 tbs)
  Shortening 2 Tablespoon
  Flour 1 Tablespoon
  Chili powder 1 Teaspoon
  Salt 2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Sugar 1 Teaspoon
  Water 1 Cup (16 tbs)
  Tomatoes 1 1⁄2 Cup (24 tbs) (canned or fresh)
  Vinegar 2 Teaspoon
  Cooked peas 1 Cup (16 tbs)
Directions

Brown onion, celery, and green pepper slowly in melted shortening.
Blend flour, chili powder, salt, pepper, and sugar; add liquid gradually, stirring constantly.
Add tomatoes and vinegar.
Simmer over low heat for 15 minutes.
Add shrimp and peas, heat thoroughly, and serve over hot rice on platter.
