El Chico Cheese Enchiladas

Who doesn't love a great cheese enchilada? This is a vegetarian sauce that you will love. Simple to make, you don't need to go out to enjoy this recipe for cheese enchiladas that taste just like El Chico Cheese Enchiladas.

Ingredients

Flour 2 Tablespoon
Vegetable oil 2 Tablespoon
Salt 1 Teaspoon
Chili powder 1/2 Cup (8 tbs)
Paprika 1/2 Cup (8 tbs)
Corn tortillas 12
Water 1 Quart
Shredded american cheese 3/4 Pound
For heating tortillas
Oil 2 Tablespoon

Directions

 

GETTING READY

1. Preheat oven to 350F.

 

MAKING

2. In a pan, add oil and flour and cook stirring for about 1 minute. Add salt and stir to mix. Add in the paprika and the chili powder and mix, pour in the water, stir and cook until the mixture is thickened.

3. In a shallow pan, using oil, heat up the corn tortillas. Lightly coat the bottom of a casserole pan with sauce,  Fill each tortilla with cheese, roll up and place in the pan. Spread some more sauce all over the pan and cover with the remaining cheese. Bake at 350F for about 10 minutes.

 

SERVING

4. Serve with your choice of beverage.
