Southern Corn Bread's picture
This simple southern corn bread is a mixed flour corn bread made with cornmeal and flour. Baked with milk and eggs along with baking agents, this southern corn bread is a good accompaniment to meats and stews.
  Cornmeal 1 1⁄2 Cup (24 tbs) (Yellow / White)
  All purpose flour 1⁄2 Cup (8 tbs)
  Baking powder 4 Teaspoon
  Salt 1⁄2 Teaspoon
  Milk 1 1⁄4 Cup (20 tbs)
  Eggs 2
  Bacon drippings/Shortening 1⁄3 Cup (5.33 tbs)

In a mixing bowl combine the corn-meal, flour, baking powder, and salt.
Beat together the milk and eggs.
In a 10 inch ovenproof skillet or corn bread skillet melt bacon drippings or shortening.
Pour drippings into egg mixture, leaving about 1 tablespoon drippings in hot skillet.
Add egg mixture to dry ingredients; beat just till smooth (do not overheat).
Pour batter into hot skillet; bake in a 425° oven for 18 to 20 minutes or till done.
