Southern Corn Bread
|Cornmeal||1 1⁄2 Cup (24 tbs) (Yellow / White)|
|All purpose flour||1⁄2 Cup (8 tbs)|
|Baking powder||4 Teaspoon|
|Milk||1 1⁄4 Cup (20 tbs)|
|Bacon drippings/Shortening||1⁄3 Cup (5.33 tbs)|
In a mixing bowl combine the corn-meal, flour, baking powder, and salt.
Beat together the milk and eggs.
In a 10 inch ovenproof skillet or corn bread skillet melt bacon drippings or shortening.
Pour drippings into egg mixture, leaving about 1 tablespoon drippings in hot skillet.
Add egg mixture to dry ingredients; beat just till smooth (do not overheat).
Pour batter into hot skillet; bake in a 425Â° oven for 18 to 20 minutes or till done.
