Creole Haddock Fillets
|Diced green pepper||1⁄2 Cup (8 tbs)|
|Diced green onion||1⁄2 Cup (8 tbs)|
|Haddock fillets||1 Pound, thawed|
|Lemon juice||2 Tablespoon|
|Basil leaves||1 Teaspoon|
|Black pepper||To Taste|
|Cayenne pepper||To Taste|
|Canned mushroom stems and pieces||4 Ounce, drained (1 Can)|
|Tomato||1 Medium, chopped|
Place butter, green pepper and onion in a 12x8x2 inch glass baking dish.
Microwave 3 to 4 minutes or until tender.
Place fish over vegetables with thicker parts toward outside of dish.
Pour lemon juice over top of fish and sprinkle with basil, salt, black pepper and cayenne pepper.
Arrange mushrooms and tomatoes over top of fish.
Cover with plastic wrap.
Microwave 4 to 6 minutes, giving dish a 1/2 turn during cooking.
Let stand, covered, for 5 minutes before serving.
Garnish with tomato and lemon wedges.
