Lobster A La Newburg

Ingredients
  Live lobster 1
  Boiling water 2 Cup (32 tbs)
  Butter/Margarine 1⁄4 Cup (4 tbs)
  Sherry wine 1 Cup (16 tbs)
  Salt 1 Teaspoon
  Paprika 1⁄4 Teaspoon
  Nutmeg 1 Dash
  Egg yolks 4 , beaten
  Cream/Evaporated milk 1 1⁄2 Cup (24 tbs)
Directions

Pressure cook live lobster in boiling water at 15 lbs.pressure for 10 minutes.
Reduce pressure with cool water.
Cool lobster and cut lengthwise into halves, remove meat and break it into small pieces.
Melt butter in top of double boiler.
Add lobster.
Blend in sherry and seasonings.
Combine egg yolks and cream.
Add egg mixture to lobster slowly, stirring constantly.
Cook until thick.
