|All purpose flour||1 Cup (16 tbs)|
|Cornmeal||1 Cup (16 tbs)|
|Baking powder||4 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Milk||1 Cup (16 tbs)|
|Dark brown sugar||3 Tablespoon|
|Shortening||1⁄4 Cup (4 tbs), softened (Golden Crisco)|
|Eggs||2 , beaten|
|Corn kernels||1⁄2 Cup (8 tbs)|
Preheat oven to 425Â°F.
Grease 9x9x2 inch baking pan.
Blend flour, cornmeal, baking powder, baking soda, salt and milk.
Set aside for 5 to 10 minutes.
Blend sugar and shortening until smooth.
Add eggs and corn; blend.
Beat in the flour mixture until thoroughly blended.
Bake for 20 minutes or until golden brown.
Sprinkle Cheddar cheese over top and bake an additional 5 minutes.
