Beef And Bean Stew
|Ground beef||1 1⁄2 Pound|
|Bacon||1⁄4 Pound, crisp cooked|
|Spanish onions||2 Large, chopped|
|Green bell peppers||2 Large, chopped|
|Canned sliced mushrooms||4 Ounce, drained (1 Can)|
|Canned kidney beans||16 Ounce, drained (1 Can)|
|Cooked egg noodles/Cooked rice / spaghetti||2 Cup (32 tbs)|
|Tomatoes||3 Large, thinly sliced|
Brown the ground beef in a skillet, stirring until crumbly; drain.
Add the bacon, onions and green peppers; cook over medium-low heat for 10 minutes, stirring frequently.
Add the mushrooms, kidney beans, noodles and tomatoes and mix well.
Season and simmer, covered, for 20 minutes, adding water if necessary.
Note: If desired, the cooked ingredients may be placed in a casserole, topped with shredded cheese, bread crumbs and bacon slices, and browned in the oven.
