South American Chicken And Rice
|Raw rice||1 Cup (16 tbs) (Not Minute Rice)|
|Chopped onion||1 Cup (16 tbs)|
|Chopped celery||1 Cup (16 tbs)|
|Sliced green stuffed olives||1⁄2 Cup (8 tbs)|
|Chopped green pepper||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm)|
|Chicken broth||2 1⁄2 Cup (40 tbs)|
|Cooked diced chicken||1 1⁄2 Cup (24 tbs)|
|Olive oil||1⁄4 Cup (4 tbs)|
|Cooked peas||1 Cup (16 tbs)|
Heat oil; put rice, onion, celery and garlic in hot oil.
Add remaining ingredients, except peas.
Put into covered roaster and cook for 1 hour and 15 min. in a 300 degree oven.
When done, add peas on top and serve with a salad and bread sticks for a beautiful onedish meal.
Serves 4, or may be doubled or tripled to serve company.
