South American Chicken And Rice is an amazingly delicious recipe. Try this chicken recipe; I am sure you will have a huge fan following for this one!
  Raw rice 1 Cup (16 tbs) (Not Minute Rice)
  Chopped onion 1 Cup (16 tbs)
  Chopped celery 1 Cup (16 tbs)
  Sliced green stuffed olives 1⁄2 Cup (8 tbs)
  Chopped green pepper 1⁄2 Cup (8 tbs)
  Garlic 1 Clove (5 gm)
  Chicken broth 2 1⁄2 Cup (40 tbs)
  Cooked diced chicken 1 1⁄2 Cup (24 tbs)
  Olive oil 1⁄4 Cup (4 tbs)
  Cooked peas 1 Cup (16 tbs)
  Salt To Taste
  Pepper To Taste

Heat oil; put rice, onion, celery and garlic in hot oil.
Keep turning.
Add remaining ingredients, except peas.
Put into covered roaster and cook for 1 hour and 15 min. in a 300 degree oven.
When done, add peas on top and serve with a salad and bread sticks for a beautiful onedish meal.
Serves 4, or may be doubled or tripled to serve company.
