Washington Cherry Nut Muffins
|Flour||2 Cup (32 tbs)|
|Baking powder||4 Teaspoon|
|Almonds||1⁄2 Cup (8 tbs), chopped|
|Wheat germ||1⁄2 Cup (8 tbs)|
|Orange rind||2 Tablespoon, grated|
|Dark brown sugar||1⁄4 Cup (4 tbs)|
|Almond extract||1 Teaspoon|
|Safflower oil||1⁄4 Cup (4 tbs)|
|Pie filling||1 Can (10 oz) (cherry)|
Combine first six ingredients in large mixing bowl and mix thoroughly.
Whisk eggs, sugar, almond extract and oil until well blended.
Add cherries, juice and all.
Presweetened pie cherries cut down on the sugar needed.
Blend together quickly and spoon into muffin tins.
Bake until they just begin to brown on top.
Bake at 375 degrees 22 to 25 minutes
