Mixed Grain Spoon Bread
|Cake/1 tablespoon dried yeast||1|
|Milk||1 1⁄4 Cup (20 tbs) (Lukewarm)|
|Eggs||2 , beaten|
|Oil||1⁄4 Cup (4 tbs)|
|Molasses||1⁄4 Cup (4 tbs)|
|Nutritional yeast||1⁄4 Cup (4 tbs)|
|Milk powder||1⁄4 Cup (4 tbs)|
|Cornmeal||1 Cup (16 tbs)|
|Soy flour||1⁄2 Cup (8 tbs)|
|Whole wheat flour||1⁄2 Cup (8 tbs)|
|Rye flour||1⁄2 Cup (8 tbs)|
Soften cake or dried yeast in 1/4 cup of milk.
Let rise for 10 minutes.
Add rest of milk, eggs, oil and molasses.
Sift remaining ingredients together and stir into liquid mixture.
When blended thoroughly, turn into oiled square pan.
Set in warm place to rise at least 30 minutes.
Bake at 425° F. for 20 minutes, then at 375° F. about 20 minutes longer.
Cool slightly and cut into squares.
