Beef And Wine Stew

Ingredients
  Boneless beef roast 3 Pound
  Onion 1 Small
  Brandy 1⁄4 Ounce
  Consomme 1 Cup (16 tbs)
  Red wine 1⁄2 Cup (8 tbs)
  Italian spices 1⁄2 Teaspoon
  Sugar 1 Cup (16 tbs)
  Carrots 3 , cut into pieces
  Parsley sprigs 3
  Salt To Taste
  Pepper To Taste
Directions

Brown roast in Dutch oven; add onion and saute.
Pour brandy over meat and ignite.
Add consomme, wine, spices, sugar, carrots, parsley, salt and pepper.
Cover and simmer 3 to 4 hours.
