Minnesota Wild Rice Muffins
|All purpose unbleached flour||1 Cup (16 tbs)|
|Whole wheat flour||1 Cup (16 tbs)|
|Baking powder||4 Teaspoon|
|Minced onion flakes||1 Teaspoon|
|Cooked wild rice||1 Cup (16 tbs), well drained|
|Buttermilk||1 1⁄2 Cup (24 tbs)|
|Melted butter||1⁄3 Cup (5.33 tbs)|
Combine the first ten ingredients in a large mixing bowl.
Whisk the eggs, buttermilk and melted shortening in another bowl.
Combine quickly, pouring the wet ingredients into the dry.
Spoon into greased muffin tins.
Bake until done and serve warm.
Bake at 375 degrees 22-25 minutes
