Cajun Red Beans And Rice
|Chopped white onion||1 Cup (16 tbs) (1 Medium)|
|Chopped scallions||1⁄4 Cup (4 tbs), trimmed (3 Scallions)|
|Minced garlic||1⁄2 Teaspoon (2 Cloves)|
|Yellow bell pepper||2⁄3 Cup (10.67 tbs), seeded and chopped|
|Canned red kidney beans||30 Ounce, drained and rinsed (Two 15 Ounce Can)|
|Turkey breast||3 1⁄2 Ounce, smoked and chopped (Skinless)|
|99% fat-free smoked turkey stock||2 Cup (32 tbs)|
|Cooked white rice||2 Cup (32 tbs)|
|Ground black pepper||1⁄4 Teaspoon|
|Dried thyme||1⁄2 Teaspoon|
Combine the onion, scallions, garlic, and bell pepper in a saucepan.
Cook for about 5 minutes over medium low heat, until the onion turns translucent.
Add all the remaining ingredients.
Bring to a boil over medium heat, cover, reduce the heat, and simmer for 30 minutes.
