  Chopped white onion 1 Cup (16 tbs) (1 Medium)
  Chopped scallions 1⁄4 Cup (4 tbs), trimmed (3 Scallions)
  Minced garlic 1⁄2 Teaspoon (2 Cloves)
  Yellow bell pepper 2⁄3 Cup (10.67 tbs), seeded and chopped
  Canned red kidney beans 30 Ounce, drained and rinsed (Two 15 Ounce Can)
  Turkey breast 3 1⁄2 Ounce, smoked and chopped (Skinless)
  99% fat-free smoked turkey stock 2 Cup (32 tbs)
  Cooked white rice 2 Cup (32 tbs)
  Ground black pepper 1⁄4 Teaspoon
  Dried thyme 1⁄2 Teaspoon
  Bay leaf 1
  Salt 1⁄2 Teaspoon

Combine the onion, scallions, garlic, and bell pepper in a saucepan.
Cook for about 5 minutes over medium low heat, until the onion turns translucent.
Add all the remaining ingredients.
Bring to a boil over medium heat, cover, reduce the heat, and simmer for 30 minutes.
