Creole Goulash

This creole goulash recipe is a stew like recipe made with veal and bacon. Cooked with vegetables and string beans, the creole goulash is seasoned simply with salt and pepper and is ready to serve in about an hour.
Ingredients
  Bacon strip 3
  Veal round 1 (1.25 Inch Thick)
  Carrots 3 Large, sliced
  String beans 1⁄2 Pound (Fresh Or Frozen)
  Green pepper 1
  White onion 1 Large, sliced
  Tomato 1 Large, sliced
  Potatoes 3 Medium
  Chopped parsley 14 Cup (224 tbs)
  Water 1 Cup (16 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Fry bacon in Dutch oven or large pot until crisp; remove and set aside.
Brown meat in bacon fat; layer carrots over meat.
Add layer of beans and layer of green pepper rings.
Spread onion, tomatoes and potato slices over all.
Cover with parsley and bacon, crumbled or whole; add water, salt and pepper.
Cover tightly; cook over moderate heat approximately 1 hour.
