Southern Corn Fritter Muffins

Ingredients
  All purpose flour 1 1⁄2 Cup (24 tbs)
  Sugar 2 Tablespoon
  Baking powder 1 1⁄2 Teaspoon
  Soda 1⁄2 Teaspoon
  Salt 1 Pinch
  Corn 1 Cup (16 tbs), drained
  Egg 1
  Butter 2 Tablespoon, melted
  Buttermilk 1 1⁄4 Cup (20 tbs)
Directions

Mix flour, sugar, baking powder, soda and salt together in a large bowl.
Stir in canned corn.
Whisk egg, melted butter and buttermilk.
Add quickly to dry ingredients.
Spoon batter into greased muffin cups and bake until lightly browned.
Bake at 400 degrees 15-20 minutes
