Simmered Hawaiian Pork

Ingredients
  Pork shoulder 1 1⁄2 Pound, cubed
  Shortening/Fat 1⁄4 Cup (4 tbs)
  Water 1⁄2 Cup (8 tbs)
  Cornstarch 2 Tablespoon
  Vinegar 1⁄4 Cup (4 tbs)
  Salt 1⁄2 Teaspoon
  Pineapple juice 1 Cup (16 tbs)
  Soy sauce 1 Tablespoon
  Chopped green pepper 1⁄2 Cup (8 tbs)
  Onion 1 Medium, chopped
  Pineapple chunks 2 1⁄2 Cup (40 tbs)
Directions

Brown meat in fat; add water.
Cover and simmer for 1 hour or until tender.
Combine all remaining ingredients except green pepper, onion and pine apple in saucepan; cook until thickened.
Pour sauce over pork.
Add green pepper, onion and pineapple; cook for 15 minutes.
Serve over hot rice.
