Sam'S Beef Stew

This beef stew recipe is a filling stew made with lean beef, lamb and veal. Flavored with bay leaf, thyme, oregano and parsley, this beef stew is cooked with wine and vegetables like peas, tomatoes, carrots and mushrooms and is best served with rice or bread.
  Garlic 2 Clove (10 gm)
  Oil 1⁄3 Cup (5.33 tbs)
  Lean beef 1 Pound, cut in to chunks
  Lamb 1⁄2 Pound, cut in to chunks
  Veal 1⁄2 Pound, cut in to chunks
  Onions 1 Large
  Onions 4 Medium
  Thyme 1⁄4 Teaspoon
  Ground pepper 1⁄4 Teaspoon
  Oregano 1 Tablespoon
  Butter 1 Tablespoon
  Chopped parsley 14 Cup (224 tbs)
  Salt To Taste
  Red port wine 1 1⁄4 Cup (20 tbs)
  Water 1 Cup (16 tbs)
  Sugar 1 Tablespoon
  Shelled peas 1 Pound
  Pea pods 1⁄2 Cup (8 tbs)
  Tomatoes 4 Large, quartered
  Carrots 4 , sliced
  Small mushrooms 4 Pound
  Bay leaves 3 Large

Rub pot with garlic.
Heat oil; add beef, lamb, veal and large sliced onion and brown.
Add thyme, pepper, oregano, butter, parsley, salt, 1/2 cup wine and 1/2 cup water.
Cover; simmer 45 minutes.
Add sugar, peas and pods, tomatoes, carrots, 4 medium onions, mushrooms, remaining wine, 1/2 cup water and bay leaves.
Cover; simmer 3 to 4 hours.
