Party Peach Slaw
|Coarsely shredded cabbage||8 Cup (128 tbs)|
|Canned peach slices||29 Ounce, drained|
|Diced onion||1⁄2 Cup (8 tbs)|
|Prepared mustard||2 Teaspoon|
|Vegetable oil||1⁄2 Cup (8 tbs), divided|
|Vinegar||1⁄4 Cup (4 tbs)|
|Chopped parsley||1 Tablespoon|
|Celery seeds||1 Teaspoon|
Combine cabbage, peaches, and onion in a large bowl, cover and chill.
Combine sugar, mustard, and salt in a small bowl.
Add 1/4 cup oil, beat at medium speed of an electric mixer until blended.
Add vinegar alternately with remaining 1/4 cup oil, beat well.
Stir in parsley and celery seeds.
Chill 1 hour.
Pour dressing over cabbage mixture, tossing gently to coat.
