Soy Spoon Bread
|Soy flour||1 Cup (16 tbs)|
|Milk||3 Cup (48 tbs), cold|
|Nutritional yeast||1⁄4 Cup (4 tbs)|
|Eggs||3 , separated|
Beat soy flour into 1 cup cold milk in saucepan.
Blend in remaining ingredients except eggs.
Heat gradually; stirring constantly, and when mixture is hot, cook for 5 minutes more.
Remove from heat.
When cool, mix in egg yolks and then fold in stiffly beaten egg whites.
Turn into oiled casserole.
Bake uncovered at 375Â° F. for 30 minutes.
