Southern Oven-Fried Chicken
|Corn flake crumbs||1 Cup (16 tbs)|
|Garlic powder||1⁄2 Teaspoon|
|Ground thyme||1⁄4 Teaspoon|
|Red pepper||1⁄4 Teaspoon|
|Chicken breast||6 , halved, skinned|
|Low fat buttermilk||1⁄4 Cup (4 tbs)|
|Vegetable cooking spray||1 Dash|
Combine corn flake crumbs and seasonings in a plastic bag, mixing well.
Brush both sides of chicken breasts with buttermilk, place chicken in bag with crumb mixture, shaking to coat.
Place chicken on a broiler pan coated with cooking spray, bake, uncovered, at 400°F for 45 minutes or until done.
