Creole Liver

Ingredients
  Vegetable cooking spray 1
  Baby beef liver 1 1⁄2 Pound
  Salt 1⁄4 Teaspoon
  Pepper 1⁄4 Teaspoon
  Onions 2 Small, sliced and separated into rings
  Celery stalks 2 , sliced
  Tomatoes 2 Medium, peeled and cut into wedges
  Green pepper 1 Large, cut into thin strips
  Vegetable juice cocktail 1⁄2 Cup (8 tbs)
Directions

Coat a large skillet with cooking spray, add liver.
Sprinkle each side with salt and pepper.
Cook liver over medium heat until lightly browned on both sides.
Add remaining ingredients.
Cover and cook 15 minutes or until liver is tender.
