Seasoned Popovers

  Eggs 2
  Milk 1 Cup (16 tbs)
  All purpose flour 1 Cup (16 tbs)
  Poultry seasoning 1 Teaspoon
  Salt 1⁄2 Teaspoon

Beat eggs at medium speed of an electric mixer until frothy.
Add remaining ingredients, continue beating just until smooth.
Place a well-greased muffin pan in a 450° oven for 3 minutes or until a drop of water sizzles when dropped in muffin cup.
Remove pan from oven, fill each muffin cup two-thirds full with batter.
Bake at 450° for 15 minutes, reduce heat to 350°, and bake an additional 25 minutes.
Remove pan from oven, and serve popovers immediately while warm.

Easy peasy. At end, do not beat, but stir in flour to avoid toughening dough. Butter muffin tin generously so that the batter can easily rise. I made a batch and a half in order to fill large tins (yielded six large popovers) 2/3 full-otherwise one recipe would work for regular size-but who wants regular? Soooooo good.
