Chicken Waldorf Salad
|Broken walnuts||1 Cup (16 tbs)|
|Diced smoked chicken/Cooked chicken breast||3 Cup (48 tbs)|
|Red apple||1 Large|
|Golden apple||1 Large|
|Dried currants/Raisins||2 Tablespoon|
|Mayonnaise||1 Cup (16 tbs)|
|Orange juice||2 Tablespoon|
|Lemon juice||1 Tablespoon|
|Grated orange zest||2 Teaspoon|
|Ground pepper||To Taste|
1. Preheat oven to 350Â°F. Spread nuts in a small baking dish and toast in oven, stirring once or twice, until nuts are fragrant and lightly browned, 5 to 8 minutes.
2. In a large bowl, combine chicken, diced apples, celery, toasted walnuts, and currants. Toss to mix.
3. In a small bowl, whisk together mayonnaise, orange juice, lemon juice, and orange zest. Season dressing with salt and pepper to taste. Add dressing to chicken salad and toss to coat evenly.
