American Ice Cream
|Sugar||3⁄4 Cup (12 tbs)|
|Cream||1 Cup (16 tbs)|
Scald the milk in the top of the double-boiler.
Meanwhile mix 1/2 cup of sugar, the flour and salt and moisten with the 3 tbsp. milk.
Add the scalded milk to this mixture gradually while stirring constantly.
Return to the double-boiler and cook 20 min., stirring often.
Remove from the heat, and pour slowly over the beaten egg which has been mixed with 1/4 cup sugar.
Set aside to cool and when thoroughly cold, add the cream and vanilla.
Freeze in 8 parts ice to 1 part salt.
