Waldorf Salad In Lettuce Cups
|Chopped celery||1 Cup (16 tbs)|
|Coarsely chopped walnuts||1 Cup (16 tbs)|
|Mayonnaise||1 Cup (16 tbs)|
|Lemon juice||2 Tablespoon|
Wash, dry and polish 6 red-skinned apples.
Cut in quarters and core each quarter but do not peel.
Cut each quarter into 1/2-inch cubes and place in a medium bowl.
Add 1 cup each chopped celery and coarsely chopped walnuts.
Combine 1 cup mayonnaise with 2 tablespoons lemon juice and stir.
Add to apple mixture and stir lightly to mix well.
Serve in 6 individual lettuce cups.
The Waldorf Astoria Hotel, from whence this salad originates, now uses pecans as well as, or in place of, walnuts.
