Creole Lima Beans
|Vegetable cocktail juice||1 Cup (16 tbs)|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Chopped green pepper||1⁄2 Cup (8 tbs)|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Frozen lima beans/3 cups fresh lima beans||16 Ounce|
|Diced tomato||1 Cup (16 tbs)|
Coat a large skillet with cooking spray; add margarine, and place over medium heat until margarine melts.
Add celery, green pepper, and onion, and saute until tender.
Stir in remaining ingredients, cover and bring to a boil.
Reduce heat, and simmer 12 minutes or until beans are tender.
