Maryland Crab Cakes
|Crab meat||1 1⁄2 Pound, beaten|
|Onion||1 , chopped|
|Fresh bread crumbs||1 Cup (16 tbs)|
|Eggs||3 , beaten|
|Chopped parsley||1 3⁄4 Cup (28 tbs)|
|Dry mustard||1 Teaspoon|
|Seasoned flour||1⁄4 Cup (4 tbs) (made with 1/4 cup flour, 1/4 teaspoon salt and a pinch of pepper)|
|Heavy cream||To Taste|
|Butter/Oil||1 Cup (16 tbs) (For deep frying)|
Method In a skillet melt 6 tablespoons butter and fry onion until soft.
Add to the crab meat with breadcrumbs, eggs, parsley, mustard, paprika and salt and pepper to taste.
Stir the mixture, adding enough cream so that it will hold to- gether.
Form 6-8 small cakes, roll in seasoned flour and fry in oil or butter over moderate heat for 5 minutes on each side or until golden brown.
Drain on paper towels and serve at once.
