Boston Cream Pie
|Sugar||1 Cup (16 tbs)|
|Salad oil||3 Tablespoon|
|Sifted all purpose flour||1⁄4 Cup (4 tbs)|
|Baking powder||2 Teaspoon|
|Milk||3⁄4 Cup (12 tbs)|
|Almond extract||1⁄4 Teaspoon|
|Rich cream filling||1 Cup (16 tbs) (adjust quantity as needed)|
|Icing sugar||2 Tablespoon|
Heat oven to 350 degrees.
Grease and flour two 8-inch layer cake pans.
Beat in sugar gradually.
Stir in oil.
Sift dry ingredients together and add to first mixture alternately with milk and flavorings, stirring to blend after each addition.
Pour into prepared pans and bake until tops spring back when touched lightly in the centre, 20 to 25 minutes.
Turn out on cake racks and cool.
Put layers together with rich cream filling.
Sift icing sugar over top.
