Peanut Butter-Swirl Brownie Muffins

Most of us grew up with mom and/or grandma making us this delightful treat. As we got older and moved away from home, they were a great cure for the munchies. But we digress.

Sean and Adam and theyre two sock-covered friends take your basic store-bought brownie mix and bring it into the new millennium. Okay, perhaps theyre not THAT epic, but theyre pretty edible and will cure even the most righteous of munchies.

Ingredients

Brownie mix 1 Box (the simpler, the better)
Brewed coffee 3 Tablespoon
White chocolate chips 3/4 Cup (12 tbs) , divided (or broken white chocolate)
Peanut butter 1/2 Cup (8 tbs) (Sean & Adam like crunchy, but creamy is okay too, if you must)
Cayenne pepper 1/8 Teaspoon (Optional)
Butter 1/8 Cup (2 tbs) (or a butter spread)
Egg 1
Kosher salt To Taste (for garnish)

Directions

GETTING READY

1.Pre-heat Oven to 300 degrees F.

2.Using a paper towel (or in the off random chance you have a pastry brush) butter the muffin pan. Only where the muffins go, Dude, no on the top.

MAKING

3.In separate microwave-safe bowl, melt the peanut butter and 1/2 cup of the white chocolate (save the rest for drizzling on top of your brownies). It’s usually best to do it 30 seconds at a time, give it a stir then 30 seconds more, as needed. You just want it to be melted, not bubbling. Allow to cool slightly so you don’t burn yourself.

4.Meanwhile, add the brownie mix, coffee, cayenne (if manly enough to stand the itsty-bitsty tiny amount of heat) and egg to a medium bowl and mix with a whisk. Drizzle in the white chocolate, then the peanut butter. DON’T mix, just gently swirl it around with a spoon to create a marbling effect (watch the video, bro so you don’t eff-it-up).

5.Spoon brownie mix into buttered pan, filling each to about 1/3 full. Sprinkle the top with a tiny bit of salt.

6.Bake in oven for about 18 minutes (time may vary depending on the brownie mix - be sure to follow their baking instructions or your brownies won’t be very edible and then you’ll complain to Sean and Adam and they’ll both probably cry, being sensitive and all).

SERVING

7.Allow to cool for about 15 minutes or so, then carefully remove from the pan, and drizzle with the remaining white chocolate (you’ll have to melt it, bro).

Please note: other ingredients can be added to these brownies to make them even more edible, depending on your circumstances and where you live.
