In this video, Betty demonstrates how to make Ham and Cheddar Hopping John for New Year's dinner. This is a Southern dish that is served on New Year's Day to bring good luck throughout the year!
Chicken broth | 3 1/2 Cup (56 tbs) | |
Brown rice | 1 3/4 Cup (28 tbs) | |
Extra virgin olive oil | 1 Tablespoon | |
Chopped onion | 1/2 Cup (8 tbs) | |
Canned black eyed peas | 14 1/2 Ounce | |
Cooked ham | 4 Ounce , diced into small pieces | |
Finely shredded cheddar cheese | 1 Cup (16 tbs) |
GETTING READY
1. Preheat oven to 400 degree F.
MAKING
2. In a medium pot bring chicken broth and brown rice to a boil. Cover with a lid, reduce heat to low, and cook for 45 minutes or until tender. Remove the pot from heat.
3. When rice is nearly done, in a deep skillet, heat oil and saute onion until clear.
4. Remove the skillet from flame and stir in black-eyed beans. Add as much of the cooked rice as desired (about 2/3 of it) and stir in diced ham.
5. Into a medium sized casserole dish, transfer the mixture and sprinkle cheddar cheese evenly over top.
6. Place casserole in oven at 400 degrees F, set to BROIL. Broil for about 5 minutes or until cheese is melted and bubbly.
7. Increase the oven heat to BROIL, keeping the BROIL setting for about ½ minute to brown the top.
SERVING
8. Serve immediately with parsley garnish and enjoy!
