Joe'S Stone Crab Restaurant Shrimp Creole

Ingredients
  Chopped salt pork 1⁄4 Cup (4 tbs)
  Chopped celery 1⁄2 Cup (8 tbs)
  Chopped onion 1⁄2 Cup (8 tbs)
  Canned tomatoes 28 Ounce
  Chili sauce 3⁄4 Cup (12 tbs)
  Tomato paste 1⁄3 Cup (5.33 tbs)
  Garlic 1 Clove (5 gm)
  Gravy base 1 Teaspoon
  Dried thyme leaves 1⁄2 Teaspoon
  Salt 3⁄4 Teaspoon
  Pepper 1⁄4 Teaspoon
  Shelled shrimp 1 1⁄2 Pound
  Hot cooked rice 1 Cup (16 tbs)
Directions

In large saucepan fry pork till crisp; remove bits of pork.
Cook celery and onion in drippings till tender.
Add tomatoes, chili sauce, tomato paste, garlic, gravy base, thyme, salt, and pepper.
Simmer, covered, for 30 minutes.
Stir in shrimp.
Serve over hot cooked rice.
