|Pork loin roast||3 Pound, salt and pepper (Salt and pepper of)|
|Honey||1⁄2 Cup (8 tbs)|
|Pineapple juice||1⁄2 Cup (8 tbs)|
Score fat surface of pork.
Season with salt and pepper, and place on rack, fat side up, in roasting pan.
Make glaze of honey and pineapple juice.
Roast meat 3 hours at 350°F., basting at intervals with glaze.
Add a little water of the pan during roasting to prevent glaze from burn Serve with gravy made from pan juices.
Note: This dish is excellent served cold.
