Skillet Meat Loaf with Creole Lima Beans
|Soft bread crumbs||1⁄2 Cup (8 tbs)|
|Canned onion soup||2⁄3 Cup (10.67 tbs)|
|Luncheon meat||1⁄2 Can (5 oz), finely chopped|
|Hamburger/Ground fresh pork||1⁄2 Pound|
|Dry bread crumbs||1⁄4 Cup (4 tbs)|
|Salad oil||2 Tablespoon|
|Bacon slices||3 Ounce|
|Canned lima beans||15 Ounce (In Tomato Sauce)|
|Diced green pepper||1⁄4 Cup (4 tbs)|
Soak crumbs in onion soup a few minutes; then mix in next 7 ingredients.
Shape meat into small loaf, and roll in crumbs.
Heat salad oil in covered skillet over low heat.
Place strips of bacon close together in pan.
Set meat loaf on bacon, which will add flavor and prevent bottom of loaf from cooking too quickly.
Cover, and cook slowly,about 10 minutes.
Turn meat loaf, and add lima beans and green pepper.
Cover, and continue cooking 10-15 minutes.
