Old Fashioned Slaw
|Cabbage head||1 Medium, shredded|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Chopped sweet pickle||1⁄2 Cup (8 tbs)|
|Mayonnaise||1⁄4 Cup (4 tbs)|
|Carrots||3 Medium, shredded|
|Green onions||2 , chopped|
|Celery seeds||1 Teaspoon|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Sweet pickle juice||1⁄2 Cup (8 tbs)|
|Egg||1 , beaten|
Combine first 7 ingredients in a large bowl; set aside.
Melt butter in a heavy saucepan.
Add pickle juice, salt, and pepper; stir well.
Gradually stir about one-fourth of hot mixture into egg; add to remaining hot mixture, stirring constantly with a wire whisk.
Cook over low heat, stirring constantly, until thickened.
Add dressing to cabbage mixture; mix well.
Chill 1 to 2 hours before serving.
