Put each piece of cheese between two slices of bread (taking care that the cheese does not overlap).
Tie a white thread round each sandwich.
Melt a tablespoonful of butter in a frying-pan, and cook the sandwiches for 4 or 5 minutes.
When one side is golden, add the rest of the butter, turn over and brown the other side for the same time.
The cheese should be just soft all through.
This simple appetizer is delicious, but it can be made even more so by putting a thin slice of ham inside between two very thin slices of cheese less than 1/4" thick, then putting this between the pieces of bread, as before.
Remove the white thread before serving.
