Southwest Chicken Strips

The southwest flavor combinations and the crunchy outside texture of this chicken strip will leave you forgetting all about those fried chicken strips you get at the restaurants and get you cooking up this healthy and easy recipe in the comfort of your own home.

Ingredients

Chicken tenders 1 Pound
Panko bread crumbs 3/4 Cup (12 tbs)
4 cheese mexican 1/2 Cup (8 tbs)
Chili powder 1 Tablespoon
Paprika 1 Tablespoon
Cumin 2 Teaspoon
Garlic powder 2 Teaspoon
Salt 1 Teaspoon
Pepper 1 Teaspoon
For chipotle ranch dipping sauce
Light ranch 4 Ounce
Chipotle pepper in adobe sauce 3 , seeded and chopped
For roasted sweet peppers
Yellow pepper 1 , seeded and sliced
Red pepper 1 , seeded and sliced
Olive oil 1 Tablespoon
Salt and pepper To Taste
Red pepper flakes 1/4 Teaspoon (Optional)

Directions

For Southwest Chicken Strips:

GETTING READY

1. Preheat oven to 375 degree F.

2. Line a baking sheet with foil and set aside.

MAKING

3. In a large bowl, mix together bread crumbs, chili powder, cumin, paprika, garlic powder, cheese, salt and pepper.

4. Toss the chicken tenders, one at a time in the bread crumb mixture.

5. Place chicken tenders on the lined baking sheet. Pop in oven and bake for 15 minutes or until it reaches an internal temperature of 165 degrees.

SERVING

6. Serve hot with chipotle ranch and roasted sweet peppers (recipe follows).

TIPS

You can add a little water or olive oil to moisten chicken and allow the mixture to stick to it.

Place chicken strips on rack over baking sheet, if desired to keep strips crispy all around.

For Chipotle Ranch:

MAKING

1. In a mixing bowl, combine light ranch dressing, and chipotle pepper. Mix well and set aside.

For Roasted Sweet Peppers:

GETTING READY

1. Preheat oven to 375 degree F.

2. Line a baking sheet with foil and set aside.

MAKING

3. On the lined baking sheet, place the peppers and drizzle olive oil on top.

4. Season with salt, pepper, and red pepper flakes.

5. Pop in oven and bake for 10 minutes or until tender.
