Quick Creole Peas
|English peas||2 Pound|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Chopped green pepper||1⁄4 Cup (4 tbs)|
|Peeled chopped tomato||1 Cup (16 tbs)|
Shell and wash peas; cover with water, and bring to a boil.
Cover, reduce heat, and simmer 8 to 12 minutes; drain, reserving 2 tablespoons liquid.
Saute onion and green pepper in butter in a medium skillet until tender.
Stir in peas, tomato, salt, pepper, and reserved pea liquid; cook, stirring constantly, until thoroughly heated.
