Laulaus Hawaiian Style
|Spinach leaves||36 Large|
|Fresh salmon||1 1⁄2 Pound|
|Lean pork||2 Pound|
Wash spinach leaves thoroughly in several changes of water, and dry.
Place 2 or 3 in a slightly overlapping arrangement on 12 6-inch aluminum foil squares.
Cut salmon into 1 1/2-irich cubes; sprinkle with salt.
Cut lean pork into 2-inch cubes.
Place 2 or 3 pieces of fish and same amount of meat on each spinach serving.
Sprinkle with chopped onion.
Roll up spinach, wrap securely in foil package and tie with thread.
Place in large steamer or on trivet in Dutch oven.
Keep plenty of water boiling in bottom of pot.
Cover, and steam 2 1/2 hours.
Remove thread from packages, and place on serving tray.
Note: These steamed, leaf-wrapped packages can be made with a variety of savory fillings-meat, fish and vegetables, with seasonings.
In place of Hawaii's giant taro greens, we suggest the largest leaves you can find in bags of very fresh, green spinach.
