1. Place a Dutch oven over medium high flame, and pour oil in it.
2. Add onion, pepper, chicken, oregano, paprika, and salt. Stir and cook for 3-5 minutes.
3. Drop tomato sauce, pimiento, olives, capers, and tomatoes.
4. Pour water, and chicken stock. Mix well. Bring it to a boil.
5. Add rice and give it a good stir. Simmer for 35-45 minutes or until rice and chicken is cooked.
