One-Dish Chicken And Rice (Asopao De Pollo)

Delicious combination of chicken and rice!
  Olive oil 1 Tablespoon
  Chicken thigh 2 1⁄4 Pound, cut into 2-inch pieces
  Hot pepper 4 , chopped (Anaheim or poblano chile peppers)
  Onion 1 Small, chopped
  Dried oregano 1 Tablespoon, crushed
  Sweet paprika 1 Teaspoon
  Salt 1 Teaspoon
  Tomato sauce 398 Milliliter (1 can)
  Tomatoes 2 , chopped
  Pimento 1 Cup (16 tbs), rinsed (1 can)
  Stuffed olives 1⁄2 Cup (8 tbs) (green, handful)
  Capers 2 Tablespoon, rinsed
  Water 2 Cup (32 tbs)
  Chicken stock 4 Cup (64 tbs)
  Rice 2 1⁄2 Cup (40 tbs)

1. Place a Dutch oven over medium high flame, and pour oil in it.
2. Add onion, pepper, chicken, oregano, paprika, and salt. Stir and cook for 3-5 minutes.
3. Drop tomato sauce, pimiento, olives, capers, and tomatoes.
4. Pour water, and chicken stock. Mix well. Bring it to a boil.
5. Add rice and give it a good stir. Simmer for 35-45 minutes or until rice and chicken is cooked.

6. Serve chicken and rice hot.
