In this video, Betty demonstrates how to make Bacon and Jalapeno Hopping John. This is an updated version of the traditional Southern dish that is purported to bring you good luck all year if eaten on New Year's Day! This is also known as "Good Luck Peas."
Canned black eyed peas | 30 Ounce , undrained | |
Beef broth | 21 1/2 Ounce | |
Uncooked white rice | 1 Can (10 oz) (((1 soup can))) | |
Butter | 2 Tablespoon , melted | |
Onion | 1 Small , chopped | |
Jalapeno pepper | 2 , seeded and chopped | |
Bacon slices | 6 , crisped, crumbled | |
Sharp cheddar cheese | 1/2 Cup (8 tbs) , finely shredded |
MAKING
1. In a deep skillet take undrained black-eye peas. Place skillet over low heat and bring it to a boil.
2. In a medium sized pot, combine beef broth and rice. Mix well. Place the pot on medium heat, cover with lid, and bring it to a boil. Reduce the flame to low and cook for 15 minutes.
3. Meanwhile, in a small saucepan melt butter. Drop onion and jalapeno pepper in it. Saute until onions are translucent.
4. Add sauteed onion mixture and cooked rice into the skillet with heated peas. Mix well.
5. In a serving dish, transfer the mixture. Cover with lid to keep it warm
SERVING
6. Sprinkle cheese and bacon on top and serve it hot in individual serving bowls.
TIPS
You can add more or less cooked rice into the skillet depending on your taste.
