Baked Pompano Creole

Ingredients
  Pompano 1 Pound
  Salt 2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Flour 2 Teaspoon
  Cooking oil 1⁄4 Cup (4 tbs)
  Onion 1 Cup (16 tbs), chopped
  Celery 1 Cup (16 tbs), chopped
  Hot sauce 1⁄8 Teaspoon
  Garlic salt 1⁄4 Teaspoon
  Canned tomatoes 2 1⁄2 Cup (40 tbs), strained
  Capers 8
  Parsley 2 Tablespoon, chopped
  Lemon 1 , sliced
Directions

Place pompano in pan; sprinkle 1 teaspoon salt, pep- per, flour and 2 tablespoons oil over top.
Add 1/2 cup hot water.
Bake at 350 degrees for 30 minutes.
Cook onion and celery in remaining oil over low heat for 5 minutes.
Add hot sauce, remaining salt, garlic salt, tomatoes, capers and 4 cups hot water.
Simmer for 10 minutes; pour over pompano.
Bake at 325 degrees for 30 minutes longer, basting several times with sauce.
Serve on platter; top with parsley and lemon slices.
