Mormon Jalapeno Jelly
|Cider vinegar||3⁄4 Cup (12 tbs)|
|Apple juice||3⁄4 Cup (12 tbs)|
|Sugar||5 1⁄2 Cup (88 tbs)|
|Jalapeno peppers/6 ounces canned peppers||4|
Mix vinegar, apple juice, and sugar. Stir well. Add peppers and bring to a boil. Boil hard for 10 minutes, stirring often. Remove from heat; add pouch of pectin and mix well. Add 2 to 3 drops of green food coloring, if desired, and strain into sterilized jars. Seal with paraffin. To serve, dip a small amount of the jelly onto a knife and into softened cream cheese. Spread on a small snack cracker and then eat in one bite.
