1. In a large skillet, pour water, add bacon and the kale leaves. Cover and simmer for 10 minutes.
2. Using a knife, poke some holes into the sausages and add to the skillet. Also add potatoes and oats, simmer with the lid on for 30 minutes; add more water, if required.
3. Take the sausages and bacon slices out, drain the excess water and mash the kale and the potatoes. Season with salt, pepper and nutmeg.
4. In individual serving plates, serve kale, sausage and bacon along with some mustard.
